Puerto Rican beans and rice

1/2 small onion chopped
1/2 banana pepper or a handful from a jar, chopped
3 garlic cloves
2 can kidney beans
1 c tomato sauce
3 TBSP sazon seasoning (recipe below)
1 bay leaf
1/8 tsp oregano
salt to taste

Homemade Sazon seasoning:
1 tbsp ground coriander
1 tbsp ground cumin
1 tbsp tumeric
1 tbsp garlic powder
1 tbsp salt
2 tsp oregano
1 tsp pepper

Add some oil to a pan and saute oniona nd peppers and garlic for about 2 minutes. Add the beans, not drained, and the rest of the ingredients to the pan along with 1/2-3/4 cup of water. Bring to a boil and simmer for 20 minutes. discard bay leaf and serve over rice.

Onions confit

3 onions, cut into strips
1-2 tbsp butter
1 tbsp oil
Cook covered for 15 minutes
Add 1/2 tsp salt and 1/2tsp sugar
Stir and turn heat up to medium high.
Add 2-3 tbsp balsamic vinegar
Stir until carmelized.
