2 tbsp chopped sundried tomatoes
1 tbsp minced red onion
Pinch of salt
Egg roll wrapper
Mix together and place in egg roll wrapper. This should fill 3 wrappers. Fry in oil until outside is golden brown.
Sauce:
1/2 cup fresh cilantro
- 1/4 cup green onions
- 1/4 cup cashews
- 1/2 cup honey
- 1/4 cup extra-virgin olive oil
- 2 tablespoons distilled white vinegar
- 1 tablespoon sugar
- 1 teaspoon tamarind pulp
- 1/2 teaspoon kosher salt
- 1/2 teaspoon coarse ground black pepper
- Add ingredients together in a small food processor and pulse until combined, in small pieces but not smooth.
